Cilantro and Carrot Green Chimichurri
-Pulse together the following in a food processor:
2 garlic cloves
1 serrano chili (seeds and stems removed)
Add in the following:
The greens from 4 carrots
Cilantro (half a bunch, lightly chopped)
1 lime (the juice and zest)
¼ cup extra virgin olive oil
-Blend until the mixture is well combined.
