Sautéed Joi Choi
-In a large skillet, toast ¼ cup slivered almonds until light brown. Watch the pan carefully so they don’t burn.
-Chop up the foilowing:
1 small onion
2-4 cloves of garlic
1 bunch of joi choi
-Heat 2 TBS sesame oil and sauté the onions, the garlic and the joi choi.
-Top with the toasted almonds and some chopped cilantro.
